Ingredients

Dough

  • 2 ½ cups gluten free all purpose flour
  • 2 ½ teaspoons instant yeast
  • 1 ½ teaspoons xanthan gum
  • 1 teaspoon salt
  • 4 tablespoons sugar
  • 1 cup warm non dairy milk
  • 3 tablespoons butter, melted
  • 1 large egg

Filling

  • ⅓ – ½ cup packed coconut sugar or brown sugar
  • cup raw sugar or sugar substitute
  • 2 teaspoons cinnamon
  • a pinch sea salt
  • 2 tablespoons butter, softened

Glaze

  • 1 ½ cups powdered sugar
  • 1 ½ tablespoons melted butter
  • 2–3 tablespoons non dairy milk/cream

Instructions

  1. Combine the dry ingredients for the dough in a mixing bowl.
  2. Add warm milk, melted butter, and the whisked egg to the dry ingredients and mix until combined.
  3. Knead the dough for 2-3 minutes until it resembles pizza dough.
  4. Shape the dough into a ball, place it in an oiled bowl, cover, and let it rise until doubled in size (70-90 minutes).
  5. Prepare the filling by mixing coconut sugar, raw sugar, cinnamon, sea salt, and softened butter until paste-like.
  6. Roll out the dough into a rectangle and brush with melted butter, then spread the filling over it.
  7. Roll the dough tightly and slice into 10-12 pieces.
  8. Place the rolls in a baking dish, cover, and let them rise for another 30-45 minutes.
  9. Preheat the oven to 350°F and bake the rolls for 20-25 minutes.
  10. Prepare the glaze while baking, then drizzle it over the warm rolls before serving.
