Ingredients

The meat

  • 3 pounds well-marbled beef chuck stew meat, cut into 1-inch pieces
  • 1 tablespoon kosher salt
  • 1 teaspoon kosher salt

The vegetables

  • 5 ribs celery, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 4 medium carrots, peeled and cut into 1-inch pieces
  • 2 medium parsnips, peeled and cut into 1-inch pieces
  • 1 ½ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh thyme leaves
  • 1 ½ pounds russet potatoes, peeled, cut into 1-inch pieces
  • ¼ cup chopped fresh parsley leaves

The liquids and seasonings

  • 3 tablespoons olive oil
  • 1 tablespoon all-purpose flour
  • 4 cups beef broth
  • 2 cups water
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Season the beef with salt and heat olive oil in a large pot.
  2. Add the beef and cook until no longer pink, about 10 minutes.
  3. Add celery, onion, carrots, and parsnips, season with salt and pepper, and cook until softened, about 10 minutes.
  4. Stir in thyme and flour, cooking for 30 seconds.
  5. Add beef broth, water, balsamic vinegar, and Worcestershire sauce; bring to a boil, then reduce heat and simmer for 1 hour.
  6. Add potatoes and continue to simmer until tender, about 30 minutes.
  7. Season to taste, serve with parsley sprinkled on top.
