Easy Beef Stew

Instructions
- Season the beef with salt and heat olive oil in a large pot.
- Add the beef and cook until no longer pink, about 10 minutes.
- Add celery, onion, carrots, and parsnips, season with salt and pepper, and cook until softened, about 10 minutes.
- Stir in thyme and flour, cooking for 30 seconds.
- Add beef broth, water, balsamic vinegar, and Worcestershire sauce; bring to a boil, then reduce heat and simmer for 1 hour.
- Add potatoes and continue to simmer until tender, about 30 minutes.
- Season to taste, serve with parsley sprinkled on top.
