Easy Beef Stew

Ingredients

The stew

  • 2 lbs lean beef (stew meat)
  • 3 Tablespoons light olive oil or refined avocado oil
  • 4 cups roughly chopped mirepoix (equal parts carrots, onion, and celery)
  • 1 cup red wine
  • 2 cups chicken or beef broth
  • 1 lb baby potatoes and/or chopped peeled parsnips

Seasonings

  • to taste Kosher salt and black pepper

Garnish

  • to taste fresh herbs

Instructions

  1. Preheat the oven to 300°F.
  2. Pat the beef dry and season it with salt and pepper.
  3. Heat oil in a Dutch oven over medium-high heat and brown the beef in batches.
  4. Once browned, set the beef aside and soften the mirepoix in the same pot.
  5. Stir in the broth and deglaze the pan, then add the red wine and return the beef to the pot.
  6. Cover and bake in the oven for 45 minutes to 1 hour.
  7. Add the baby potatoes and parsnips, cover, and continue cooking for another 45 minutes to 1 hour.
  8. Check the beef for tenderness and serve garnished with fresh herbs.
