Easy Beef Stew

roughly chopped mirepoix (equal parts carrots, onion, and celery)

red wine

chicken or beef broth

baby potatoes and/or chopped peeled parsnips

Instructions
- Preheat the oven to 300°F.
- Pat the beef dry and season it with salt and pepper.
- Heat oil in a Dutch oven over medium-high heat and brown the beef in batches.
- Once browned, set the beef aside and soften the mirepoix in the same pot.
- Stir in the broth and deglaze the pan, then add the red wine and return the beef to the pot.
- Cover and bake in the oven for 45 minutes to 1 hour.
- Add the baby potatoes and parsnips, cover, and continue cooking for another 45 minutes to 1 hour.
- Check the beef for tenderness and serve garnished with fresh herbs.
