Cucumber Ginger Mocktail

The syrup

sugar (or about 1¾ cups agave nectar)

For serving

soda
soda water (about 5 ounces per drink)

cucumber, for serving (optional)
Instructions
- Combine sliced cucumber and ginger in a large, heat-proof bowl.
- In a saucepan, bring sugar and water to a boil, stirring until the sugar dissolves.
- Pour the hot mixture over the cucumber and ginger and let it stand for 2 hours.
- Strain the syrup into a bottle and chill.
- To serve, mix about 1 shot of syrup with about 3 shots of soda water, or to taste.
- Garnish with a cucumber slice if desired.
