Classic Healthy Bolognese Sauce (Vegan)

Ingredients

The sauce base

  • ½ cup celery, diced
  • ½ cup carrots, diced
  • ½ cup sweet or yellow onion, diced
  • 2 teaspoons garlic, chopped
  • 1-1 ½ teaspoons sea salt
  • ¼ cup veggie broth or oil
  • 1 cup white wine
  • ¼ teaspoon liquid smoke
  • 28 ounces crushed tomatoes
  • 2 cups cashew or almond milk
  • 1 cup veggie broth
  • ¼ teaspoon ground black pepper

The 'meat' portion

  • ½ cup dried garbanzo beans, soaked overnight
  • ¼ cup short grain brown rice

For serving

  • 12 ounces your favorite pasta
  • to taste Grateable Vegan Parmesan (optional)

Instructions

  1. Sauté the celery, carrots, onion, garlic, and salt in a pan until browned and caramelized.
  2. Add the wine and liquid smoke, stirring to deglaze the pan until most of the wine evaporates.
  3. Add the crushed tomatoes, milk, broth, remaining salt, and pepper. Bring to a boil, then reduce heat and simmer for 80-90 minutes, stirring occasionally.
  4. Meanwhile, cook the rice in water until just beginning to get chewy, then add the soaked chickpeas and cook for an additional 8 minutes.
  5. Drain and pulse the rice and chickpeas in a food processor until crumbly.
  6. When the sauce is thickened, stir in the 'meat' mixture and adjust thickness as desired.
  7. Serve over pasta and enjoy.
