Classic Healthy Bolognese Sauce (Vegan)

Instructions
- Sauté the celery, carrots, onion, garlic, and salt in a pan until browned and caramelized.
- Add the wine and liquid smoke, stirring to deglaze the pan until most of the wine evaporates.
- Add the crushed tomatoes, milk, broth, remaining salt, and pepper. Bring to a boil, then reduce heat and simmer for 80-90 minutes, stirring occasionally.
- Meanwhile, cook the rice in water until just beginning to get chewy, then add the soaked chickpeas and cook for an additional 8 minutes.
- Drain and pulse the rice and chickpeas in a food processor until crumbly.
- When the sauce is thickened, stir in the 'meat' mixture and adjust thickness as desired.
- Serve over pasta and enjoy.
