Green Harissa Sauce

Instructions
- Preheat the oven to 400°F.
- Cut the chicken into bite-sized pieces, season with salt, pepper, and chili powder.
- In a large skillet, heat olive oil over medium-high heat and sear the chicken until golden brown, then set aside.
- Sauté sliced carrots and onions in the same pan until tender, then add garlic and ginger.
- Stir in spices and toast for a minute, then add salt, sugar, tomatoes, dried apricots, and water.
- Bring to a simmer, then stir in couscous and nestle in the chicken.
- Cover and bake in the oven for 15-20 minutes.
- While baking, prepare the Green Harissa Sauce by blending the sauce ingredients until smooth.
- After baking, optionally broil for a minute for extra color, then serve with the sauce.
