Ingredients

The main dish

  • lbs boneless chicken thigh meat
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 2 teaspoons chili powder
  • 3 medium carrots
  • 1 large onion
  • 1 tablespoon fresh ginger, minced
  • 5 cloves garlic, rough chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon ground turmeric
  • ¾ teaspoon cinnamon
  • ½ teaspoon caraway seeds (optional)
  • 1 teaspoon sugar
  • 1 14-ounce can diced tomatoes
  • ¼ cup dried apricots, diced
  • cups water
  • cups couscous

Green Harissa Sauce

  • 1 cup plain yogurt
  • ½–1 bunch Italian parsley
  • 1–2 cloves garlic
  • ½ to 1 whole jalapeño
  • ½ teaspoon smoked paprika
  • 1 teaspoon coriander
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the chicken into bite-sized pieces, season with salt, pepper, and chili powder.
  3. In a large skillet, heat olive oil over medium-high heat and sear the chicken until golden brown, then set aside.
  4. Sauté sliced carrots and onions in the same pan until tender, then add garlic and ginger.
  5. Stir in spices and toast for a minute, then add salt, sugar, tomatoes, dried apricots, and water.
  6. Bring to a simmer, then stir in couscous and nestle in the chicken.
  7. Cover and bake in the oven for 15-20 minutes.
  8. While baking, prepare the Green Harissa Sauce by blending the sauce ingredients until smooth.
  9. After baking, optionally broil for a minute for extra color, then serve with the sauce.
