Slow Cooker Chicken Tagine

Ingredients

Spices

  • 1 tablespoon paprika
  • 2 teaspoons ginger
  • 2 teaspoons turmeric
  • 2 teaspoons cumin
  • 2 teaspoons pepper
  • 1 ½ teaspoons salt

Main Ingredients

  • 1 large onion (peeled and sliced)
  • 1 whole chicken (cut into parts, back and giblets removed)
  • 1 ½ pounds potatoes (cut into 1-inch pieces)
  • 1 large tomato (cored and cut into wedges)
  • ½ pound green beans (trimmed and cut in half)
  • 4 large carrots (peeled and cut into 1-inch pieces)
  • 1 cup peas (frozen)
  • 1 large zucchini (or 2 small)
  • 1 4 ounce jar green olives (or 1 cup)
  • 3 cloves garlic (minced)
  • cup cilantro (fresh)
  • cup parsley (fresh)

Instructions

  1. Mix the spices together in a small bowl and set aside.
  2. Place the sliced onion in the bottom of the slow cooker.
  3. Add the chicken parts on top and sprinkle with half of the spice mix.
  4. Layer the potatoes, tomato, green beans, carrots, peas, zucchini, green olives, and garlic on top.
  5. Sprinkle the remaining spice mix over the vegetables and gently toss them together.
  6. Top with fresh cilantro and parsley, cover, and cook on high for 4 to 5 hours or on low for 7 to 8 hours until the chicken is tender.
  7. Serve over whole wheat couscous.
