Instructions
- Mix the spices together in a small bowl and set aside.
- Place the sliced onion in the bottom of the slow cooker.
- Add the chicken parts on top and sprinkle with half of the spice mix.
- Layer the potatoes, tomato, green beans, carrots, peas, zucchini, green olives, and garlic on top.
- Sprinkle the remaining spice mix over the vegetables and gently toss them together.
- Top with fresh cilantro and parsley, cover, and cook on high for 4 to 5 hours or on low for 7 to 8 hours until the chicken is tender.
- Serve over whole wheat couscous.
