Instructions
- Heat olive oil in a large skillet over medium heat and sauté onion and carrot for 6 minutes.
- Add garlic and spices, sauté for an additional 30 seconds.
- Stir in chicken broth, tomatoes, and apricots, then season with salt and pepper.
- Pour the mixture into a slow cooker, add chicken and chick peas, and toss to combine.
- Cover and cook on low heat for 3 ½ to 4 hours until chicken is cooked through.
- Stir in lemon juice, cilantro, and parsley, then serve warm over rice or couscous.
