Slow Cooker Chicken and Chick Pea Tagine

Ingredients

The base

  • 2 Tbsp olive oil
  • 1 medium yellow onion, chopped
  • 1 medium carrot, peeled and diced (optional)
  • 3 cloves garlic, minced
  • 1 ½ tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp ground ginger
  • ½ tsp turmeric
  • ½ tsp ground cinnamon
  • tsp cayenne pepper (optional)
  • cup low-sodium chicken broth
  • 1 14.5 oz can diced tomatoes
  • to taste Salt and freshly ground black pepper

The protein and legumes

  • 1 ½ lbs boneless skinless chicken breasts, diced
  • 1 14.5 oz can chick peas, drained and rinsed

The optional add-ins

  • cup diced dried apricots or whole raisins (optional)
  • 1 ½ Tbsp fresh lemon juice
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté onion and carrot for 6 minutes.
  2. Add garlic and spices, sauté for an additional 30 seconds.
  3. Stir in chicken broth, tomatoes, and apricots, then season with salt and pepper.
  4. Pour the mixture into a slow cooker, add chicken and chick peas, and toss to combine.
  5. Cover and cook on low heat for 3 ½ to 4 hours until chicken is cooked through.
  6. Stir in lemon juice, cilantro, and parsley, then serve warm over rice or couscous.
