Ingredients

The base

  • 2 English muffins English muffins
  • 4 eggs poached eggs
  • 1 cup cooked, flaked crab
  • 1 tomato sliced tomato
  • 1 avocado pitted and sliced

The sauce

  • ½ cup blender hollandaise

Seasoning

  • to taste paprika
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Prepare the hollandaise sauce and keep it warm.
  2. Toast the split English muffins.
  3. Poach the eggs.
  4. Warm the crab in the microwave for 45 seconds.
  5. Assemble by placing muffin halves on a plate and topping with hollandaise.
  6. Add tomato slices, avocado slices, a poached egg, and ¼ cup of crab on each muffin half.
  7. Top with more hollandaise and sprinkle with paprika, salt, and pepper.
  8. Serve warm.
