Instructions
- Prepare the hollandaise sauce and keep it warm.
- Toast the split English muffins.
- Poach the eggs.
- Warm the crab in the microwave for 45 seconds.
- Assemble by placing muffin halves on a plate and topping with hollandaise.
- Add tomato slices, avocado slices, a poached egg, and ¼ cup of crab on each muffin half.
- Top with more hollandaise and sprinkle with paprika, salt, and pepper.
- Serve warm.
