Chocolate Avocado Muffins

Ingredients

  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • tsp baking soda
  • ½ tsp salt
  • 1 small banana, mashed
  • 1 medium avocado, mashed
  • cup butter or coconut oil, room temperature, then melted
  • 1 cup brown or coconut sugar
  • 2 egg replacements or 2 regular eggs egg replacements
  • 1 tsp vanilla extract
  • cup almond milk
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line two muffin tins with muffin liners.
  2. In a large bowl, mix together the flour, cocoa, baking soda, baking powder, and salt.
  3. In a medium bowl, combine the mashed banana and avocado, then whisk in the melted butter or oil, brown sugar, egg replacements, vanilla, and almond milk until just combined.
  4. Add the dry flour mixture to the wet mixture and stir until well combined. Fold in ½ cup of chocolate chips.
  5. Scoop the batter into the muffin tins, filling each about 2 tablespoons full, and top with the remaining chocolate chips.
  6. Bake for 20-25 minutes until a toothpick comes out clean.
  7. Cool in the muffin tins for 5 minutes, then transfer to a wire rack to cool completely.
