Egg White and Avocado Salad

Instructions
- Mash the avocado in a large bowl and mix in the mustard, Greek yogurt, and lemon juice until smooth.
- Add the green onions, celery, paprika, salt, and pepper to the avocado mixture and set aside.
- Chop the egg whites, discarding the yolks, and fold them into the avocado mixture until well combined.
- Stir in the chopped turkey bacon and serve on whole wheat bread with fresh arugula.
