Easy Avocado Egg Salad

Instructions
- Scoop the avocado into a bowl, add lemon juice and a pinch of salt, and mash until creamy.
- Add the chopped eggs, egg whites, diced vegetables, herbs (if using), salt, and pepper.
- Stir everything together until well combined.
- Serve in a lettuce cup, on bread, or on a salad.
