Easy Avocado Egg Salad

Ingredients

  • 1 large ripe avocado
  • 1 tablespoon lemon juice
  • 4 hard-boiled eggs, chopped
  • 4 hard-boiled egg whites, chopped
  • 2 tablespoons finely diced red onion
  • 2 tablespoons finely diced celery
  • 2 tablespoons finely diced radish
  • ¼ teaspoon sea salt
  • teaspoon black pepper
  • 1-2 tablespoons fresh herbs (dill, cilantro, parsley, etc.), optional

Instructions

  1. Scoop the avocado into a bowl, add lemon juice and a pinch of salt, and mash until creamy.
  2. Add the chopped eggs, egg whites, diced vegetables, herbs (if using), salt, and pepper.
  3. Stir everything together until well combined.
  4. Serve in a lettuce cup, on bread, or on a salad.
