Ingredients

  • 4 large hard-boiled eggs, chopped
  • 1 ripe avocado, diced
  • 1 piece green onion, chopped
  • ¼ cup plain Greek yogurt
  • 2 tbsp sour cream
  • ½ piece lemon, juiced
  • 2 tbsp chopped walnuts
  • 1 tbsp fresh parsley, chopped
  • 1 tsp piri piri hot sauce
  • ¼ tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Combine all ingredients in a large mixing bowl.
  2. Toss delicately until well combined.
  3. Serve immediately over a bed of mixed baby greens or as a sandwich.
