Vegetable and Edamame Pasta with Basil Cream Sauce

Ingredients

The pasta

  • 300 grams Rotini or Penne pasta
  • 1-2 tsp extra virgin olive oil

The vegetables

  • 1 cup chopped sweet onion
  • 3 cloves garlic
  • 1 each orange bell pepper, chopped
  • 1 each yellow bell pepper, chopped
  • 1 small zucchini, chopped
  • 2 each tomatoes, roughly chopped
  • 1 cup frozen edamame

The basil sauce

  • 1 cup packed fresh basil
  • 1 small avocado
  • ¼ cup fresh lemon juice
  • 2 tbsp water
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • to taste black pepper
  • to taste red pepper flakes

Seasoning

  • to taste kosher salt
  • to taste pepper
  • to taste red pepper flakes

Instructions

  1. 1. Boil a large pot of water.
  2. 2. Sauté onion, olive oil, and minced garlic for 5 minutes, then add chopped vegetables and edamame, cooking for another 10 minutes.
  3. 3. Cook the pasta in boiling water for 9-11 minutes, then rinse with cold water and set aside.
  4. 4. In a food processor, blend basil, water, olive oil, lemon juice, avocado, salt, black pepper, and red pepper flakes until smooth.
  5. 5. Add chopped tomatoes to the skillet with vegetables and cook for 5 more minutes.
  6. 6. Combine drained pasta with vegetables, then mix in the basil cream sauce and season to taste. Serve warm or cold.
