High Protein Edamame Pasta

Ingredients

The pasta

  • 375 g Spaghettini
  • 2 tbsp olive oil

The vegetables and edamame

  • 1 medium yellow onion
  • 4 cloves garlic
  • 2 cups shelled edamame
  • ¼ cup pickled jalapenos or capers

The sauce

  • 1 ½ cups plant-based milk
  • ¾ cup nutritional yeast
  • 1 tsp salt
  • 1 tsp cracked pepper
  • ½ tsp chili flakes
  • 2 lemons juice
  • 1 lemon zest

The topping

  • to taste vegan or regular feta

Instructions

  1. Cook the Spaghettini in salted water until al dente.
  2. Rinse and transfer the pasta back into the pot.
  3. Add all ingredients except the feta into the pot with the pasta.
  4. Transfer to the stovetop and heat over medium-high.
  5. Stir every 3-4 minutes to combine and prevent sticking.
  6. Cook for 10-15 minutes until the pasta and edamame are tender and flavors combine.
  7. Adjust seasoning to taste.
  8. Serve immediately topped with crumbled feta.
