Lemon & Garlic Pesto Pasta

Ingredients

The pasta

  • package spaghettini
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 small shallot, minced
  • 1 zest lemon
  • ½ cup frozen edamame or peas
  • 1 tsp salt
  • ½ tsp ground pepper
  • 1 juice lemon
  • ¼ cup shredded parmesan cheese
  • 1 ball burrata

The pesto

  • ¼ cup packed fresh basil
  • ¼ cup packed fresh dill
  • ½ cup olive oil
  • ¼ cup shredded parmesan cheese
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Make the pesto by combining fresh basil, dill, olive oil, parmesan cheese, salt, and pepper using a mortar and pestle or a blender.
  2. Cook the pasta according to package directions, reserving 1 cup of pasta water before draining.
  3. In a large frying pan over medium heat, melt the butter and sauté the shallots and garlic for 3-4 minutes until softened.
  4. Reduce heat to low and stir in lemon zest, edamame or peas, salt, and pepper, cooking for a few minutes to warm them.
  5. Add lemon juice, parmesan cheese, and about ¼ cup of reserved pasta water, then stir in the noodles and cook on low for 1-2 minutes.
  6. Taste and adjust seasoning with more salt, pepper, or parmesan cheese, or add more pasta water for creaminess.
  7. Serve the pasta in a bowl or platter, topped with the burrata ball and spoon over the pesto sauce.
