Lemon & Garlic Pesto Pasta

The pesto

Instructions
- Make the pesto by combining fresh basil, dill, olive oil, parmesan cheese, salt, and pepper using a mortar and pestle or a blender.
- Cook the pasta according to package directions, reserving 1 cup of pasta water before draining.
- In a large frying pan over medium heat, melt the butter and sauté the shallots and garlic for 3-4 minutes until softened.
- Reduce heat to low and stir in lemon zest, edamame or peas, salt, and pepper, cooking for a few minutes to warm them.
- Add lemon juice, parmesan cheese, and about ¼ cup of reserved pasta water, then stir in the noodles and cook on low for 1-2 minutes.
- Taste and adjust seasoning with more salt, pepper, or parmesan cheese, or add more pasta water for creaminess.
- Serve the pasta in a bowl or platter, topped with the burrata ball and spoon over the pesto sauce.
