Quick Marinated Vegetarian Fajitas

Ingredients

Marinade

  • ¼ cup avocado oil
  • 1 unit lime (juiced)
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • to taste unit salt and pepper

Vegetables

  • 1 tablespoon avocado oil
  • 1 large red onion (sliced)
  • 3 unit bell peppers (any color, seeded and cut into strips)
  • 8 ounces mushrooms (sliced)
  • 1 unit zucchini (cut into matchsticks)
  • 2 cloves garlic (minced)

For Serving

  • 8 unit corn tortillas
  • to taste unit avocado or guacamole
  • to taste unit salsa or hot sauce
  • to taste unit sour cream
  • to taste unit cheese

Instructions

  1. Combine the marinade ingredients in a small bowl and whisk together.
  2. Place the vegetables in a shallow dish and pour the marinade over them, allowing them to marinate for at least 30 minutes.
  3. Heat avocado oil in a skillet over medium-high heat, then drain the vegetables.
  4. Add the onion and peppers to the skillet and cook for about 6 minutes, stirring often.
  5. Add the mushrooms and zucchini, cooking for an additional 5 minutes until tender.
  6. Heat the tortillas in a separate skillet until warmed through.
  7. Serve the cooked vegetables in the tortillas and add desired toppings.
