Ingredients

The vegetables

  • 2 tablespoons vegetable oil
  • 2 ½ cups sliced bell peppers (red, orange, yellow, or a combination)
  • ¾ cup sliced poblano pepper
  • 8 ounces sliced button mushrooms
  • 1 cup thinly sliced red onion
  • 2 teaspoons minced garlic

The spices

  • 2 teaspoons chili powder
  • ¾ teaspoon ground cumin
  • ¼ teaspoon onion powder
  • ¾ teaspoon smoked paprika
  • to taste salt and pepper

The garnish and serving

  • 2 tablespoons chopped cilantro
  • as needed lime wedges (for serving, optional)
  • as needed corn or flour tortillas
  • as needed fajita fixings (such as rice, beans, sour cream, salsa, and guacamole)

Instructions

  1. Heat the oil in a large pan over high heat.
  2. Add the peppers, mushrooms, and onion, and cook until tender and charred.
  3. Season the vegetables with salt and pepper.
  4. Add the garlic and cook for 30 seconds.
  5. Sprinkle the chili powder, cumin, onion powder, and smoked paprika over the vegetables.
  6. Cook for another 2-3 minutes, stirring occasionally.
  7. Sprinkle cilantro over the top and serve with lime wedges, tortillas, and toppings on the side.
