Instructions
- Heat the oil in a large pan over high heat.
- Add the peppers, mushrooms, and onion, and cook until tender and charred.
- Season the vegetables with salt and pepper.
- Add the garlic and cook for 30 seconds.
- Sprinkle the chili powder, cumin, onion powder, and smoked paprika over the vegetables.
- Cook for another 2-3 minutes, stirring occasionally.
- Sprinkle cilantro over the top and serve with lime wedges, tortillas, and toppings on the side.
