Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add sliced onion and bell peppers to the skillet.
- Sprinkle chili powder, cumin, salt, and pepper over the vegetables and toss to coat.
- Cook while stirring occasionally for 4 to 8 minutes until the edges are browned and the vegetables are tender-crisp.
- For softer vegetables, reduce heat and continue cooking until desired doneness.
- For very soft vegetables, add about ¼ cup of water and cook until the water evaporates and the veggies are soft.
