Ingredients

  • 10-12 ounces portobello mushrooms
  • 1 tablespoon coconut oil
  • ½ teaspoon cumin
  • 1 teaspoon chipotle or chili powder
  • 1 teaspoon paprika
  • 3 cloves garlic, minced
  • ½ tablespoon liquid smoke
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 juice lime
  • cup yellow bell peppers
  • cup red bell peppers
  • 1 small green bell pepper
  • 1 small onion

Instructions

  1. Heat coconut oil in a pan over medium heat.
  2. Add sliced mushrooms, spices, garlic, salt, and pepper, and sauté for about 5 minutes.
  3. Add bell peppers and onion, squeeze lime juice over, and stir to combine.
  4. Cook until the peppers soften and onions are cooked through, about 10 to 15 minutes.
  5. Taste and adjust seasoning if necessary, then remove from heat.
  6. Divide the mixture among soft taco shells and add desired toppings.
