Instructions
- Heat coconut oil in a pan over medium heat.
- Add sliced mushrooms, spices, garlic, salt, and pepper, and sauté for about 5 minutes.
- Add bell peppers and onion, squeeze lime juice over, and stir to combine.
- Cook until the peppers soften and onions are cooked through, about 10 to 15 minutes.
- Taste and adjust seasoning if necessary, then remove from heat.
- Divide the mixture among soft taco shells and add desired toppings.
