Slow Cooker Honey Teriyaki Chicken

Instructions
- Combine cornstarch and water in a bowl, then heat in a saucepan and add brown sugar, honey, soy sauce, vinegar, garlic, and ginger. Simmer and boil for 1 minute before removing from heat.
- Place chopped onion and chicken in the slow cooker and pour the teriyaki sauce over the top. Cook on high for 3 hours or low for 5 hours.
- Remove cooked chicken, shred it with forks, and return it to the slow cooker. Stir to combine and cook on low for an additional hour.
- Garnish with sesame seeds and scallion, and serve over rice, quinoa, or on rolls.
