Ingredients

The sauce

  • 1 tablespoon cornstarch
  • 1 tablespoon room temperature water
  • 3 tablespoons brown sugar
  • ¼ cup honey
  • ½ cup soy sauce
  • ¼ cup vinegar (rice wine or apple cider)
  • 2 teaspoons minced garlic
  • 1-2 teaspoons minced fresh ginger (or ½ teaspoon ground ginger)

The chicken

  • ½ medium onion, chopped
  • 4 pieces boneless skinless chicken breasts (about 1.5 – 2 lbs total)

For serving

  • to taste sesame seeds
  • to taste chopped scallion

Instructions

  1. Combine cornstarch and water in a bowl, then heat in a saucepan and add brown sugar, honey, soy sauce, vinegar, garlic, and ginger. Simmer and boil for 1 minute before removing from heat.
  2. Place chopped onion and chicken in the slow cooker and pour the teriyaki sauce over the top. Cook on high for 3 hours or low for 5 hours.
  3. Remove cooked chicken, shred it with forks, and return it to the slow cooker. Stir to combine and cook on low for an additional hour.
  4. Garnish with sesame seeds and scallion, and serve over rice, quinoa, or on rolls.
