Slow Cooker Honey Teriyaki Chicken

Ingredients

  • 2 pieces boneless chicken breasts
  • cup dry sake
  • cup mirin
  • ¼ cup soy sauce
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 2 tablespoons ginger, minced
  • to taste freshly ground black pepper
  • cup water
  • 1 ½ tablespoons cornstarch
  • 2 stalks green onions, chopped
  • to taste toasted sesame seeds

Instructions

  1. Combine chicken, sake, mirin, soy sauce, honey, garlic, and ginger in a crockpot.
  2. Season with black pepper and cook on high for 4 to 4 ½ hours.
  3. Transfer chicken to a cutting board and shred using two forks.
  4. Boil the reserved liquid from the crockpot in a small saucepan.
  5. Mix water and cornstarch, then stir into the boiling sauce until thickened.
  6. Add shredded chicken back to the pot and top with sesame seeds and green onions.
