Ingredients

The chicken

  • lb organic chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tbsp avocado oil

The vegetables

  • ½ onion, chopped
  • cups mushrooms, chopped
  • 1 bunch asparagus, rough ends removed and chopped into pieces
  • 3 cloves garlic, diced
  • 1 can artichoke hearts, quartered
  • cup capers
  • 1 lemon sliced

Instructions

  1. 1. Heat an oven-safe skillet over medium heat and add avocado oil.
  2. 2. Season the chicken thighs with salt, pepper, paprika, onion powder, and dried parsley.
  3. 3. Preheat the oven to 425°F.
  4. 4. Add the chicken to the skillet and cook for 5 minutes on each side.
  5. 5. While the chicken cooks, prepare the other ingredients.
  6. 6. Once the chicken is browned, add the other ingredients (except lemon) to the skillet and mix.
  7. 7. Top the chicken with sliced lemon.
  8. 8. Transfer the skillet to the oven and cook for 15 minutes.
  9. 9. Remove from the oven and let cool for 5 minutes before serving.
