The vegetables

onion, chopped

mushrooms, chopped

asparagus, rough ends removed and chopped into pieces

artichoke hearts, quartered

Instructions
- 1. Heat an oven-safe skillet over medium heat and add avocado oil.
- 2. Season the chicken thighs with salt, pepper, paprika, onion powder, and dried parsley.
- 3. Preheat the oven to 425°F.
- 4. Add the chicken to the skillet and cook for 5 minutes on each side.
- 5. While the chicken cooks, prepare the other ingredients.
- 6. Once the chicken is browned, add the other ingredients (except lemon) to the skillet and mix.
- 7. Top the chicken with sliced lemon.
- 8. Transfer the skillet to the oven and cook for 15 minutes.
- 9. Remove from the oven and let cool for 5 minutes before serving.
