  • 1 lb boneless skinless chicken thighs

  • 2 cloves garlic
  • 1 teaspoon fresh thyme leaves
  • ¼ teaspoon paprika
  • 4 pieces baby artichokes
  • 8 ounces cremini or baby bella mushrooms
  • 1 small red bell pepper
  • 1 large shallot
  • 4 cups baby spinach
  • 2 ounces soft goat cheese
  • to taste fine salt and black pepper

  • to taste fresh thyme

Instructions

  1. Preheat the oven to 400°F and prepare a large rimmed baking sheet with cooking spray.
  2. Pat the chicken dry, season with salt and pepper.
  3. Mix oil, lemon juice, garlic, thyme, paprika, salt, and pepper in a bowl.
  4. Toss the chicken in 1 tablespoon of the oil mixture and set aside.
  5. Combine artichokes, mushrooms, bell pepper, and shallots on the baking sheet with the remaining oil mixture.
  6. Nestle the chicken among the vegetables and bake for 20 minutes until the chicken reaches 165°F.
  7. Add spinach to the baking sheet and bake for an additional 2 minutes until wilted.
  8. Stir the spinach into the vegetables, sprinkle with goat cheese, and garnish with lemon slices and thyme.
