Instructions
- Preheat the oven to 400°F and prepare a large rimmed baking sheet with cooking spray.
- Pat the chicken dry, season with salt and pepper.
- Mix oil, lemon juice, garlic, thyme, paprika, salt, and pepper in a bowl.
- Toss the chicken in 1 tablespoon of the oil mixture and set aside.
- Combine artichokes, mushrooms, bell pepper, and shallots on the baking sheet with the remaining oil mixture.
- Nestle the chicken among the vegetables and bake for 20 minutes until the chicken reaches 165°F.
- Add spinach to the baking sheet and bake for an additional 2 minutes until wilted.
- Stir the spinach into the vegetables, sprinkle with goat cheese, and garnish with lemon slices and thyme.
