Ingredients

The chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 pinch salt & pepper
  • 1 Tbsp cooking oil

The sauce

  • 4 oz fresh spinach
  • 1 12oz. jar quartered artichoke hearts in water
  • 4 cloves garlic
  • 1 Tbsp butter
  • ½ cup chicken broth
  • ½ cup sour cream
  • 4 oz cream cheese
  • ¼ cup milk
  • ¼ cup grated parmesan
  • 1 pinch crushed red pepper
  • to taste salt and pepper

Instructions

  1. Pound the chicken to an even thickness and season with salt and pepper.
  2. Heat cooking oil in a skillet and cook the chicken until golden brown and cooked through.
  3. Chop the spinach, artichoke hearts, and mince the garlic.
  4. Remove the chicken and add butter and garlic to the skillet, sautéing until fragrant.
  5. Add chicken broth to the skillet to deglaze, then mix in cream cheese and sour cream until smooth.
  6. Stir in milk, parmesan, red pepper flakes, and pepper, cooking until combined.
  7. Add spinach to the sauce until wilted, then mix in the artichoke hearts.
  8. Return the chicken to the skillet and spoon the sauce over it before serving.
