Skinny Spinach & Artichoke Chicken

Ingredients

The chicken

  • 8 oz raw boneless, skinless chicken breast cutlets
  • 2 lbs total weight of chicken
  • to taste Salt
  • to taste pepper

The creamy topping

  • 4 oz 1/3 less fat cream cheese
  • ½ cup fat free plain Greek yogurt
  • 2 cloves garlic, minced
  • ¼ cup chopped onion
  • 14 oz can artichokes, chopped
  • 10 oz package of frozen spinach, thawed and squeezed dry
  • ½ cup grated Parmesan cheese
  • ½ cup shredded 2% Mozzarella cheese

Instructions

  1. Preheat the oven to 375°F and mist a 9 x 13 baking dish with cooking spray.
  2. Place the chicken cutlets in a single layer in the dish, season with salt and pepper, and bake for 15 minutes.
  3. In a bowl, mix the Greek yogurt and cream cheese until combined, then add the remaining ingredients and stir well.
  4. After 15 minutes, check the chicken and drain any excess liquid if necessary.
  5. Spread the cream cheese mixture evenly over the chicken and return to the oven.
  6. Bake for an additional 20-25 minutes until the chicken is fully cooked.
