Chicken with Spinach Artichoke Pasta

The main ingredients

  • 4 pieces boneless skinless chicken breasts
  • 2 teaspoons olive oil
  • 8 ounces dry orzo pasta
  • 2 cups chicken broth
  • ¼ cup cream cheese
  • ¾ cup shredded mozzarella cheese
  • ¼ cup shredded parmesan cheese
  • 2 cups fresh spinach, coarsely chopped
  • 1 cup canned or frozen artichoke hearts, coarsely chopped
  • to taste salt and pepper

For garnish

  • to taste minced parsley
  • to taste lemon wedges

Instructions

  1. Preheat the oven to 375°F.
  2. Heat olive oil in a large pan over medium-high heat.
  3. Season chicken breasts with salt and pepper, then sear for about 5 minutes until golden brown.
  4. Flip the chicken and cook for another 3-5 minutes until browned.
  5. Add orzo, chicken broth, salt, and pepper to the pan, cover, and bake for 25 minutes.
  6. Uncover the pan, remove chicken, and stir in cream cheese, mozzarella, parmesan, spinach, and artichokes.
  7. Place chicken back on top of the orzo and bake uncovered for an additional 5 minutes until cheese is melted.
  8. Taste and adjust seasoning, then garnish with parsley and lemon wedges before serving.
