Sweet Potato Tacos

Ingredients

The filling

  • 2-3 large sweet potatoes
  • ¼ - ⅓ cup almond, cashew, or rice milk
  • 1 14-ounce can black beans

The toppings

  • 10-12 small tortillas
  • to taste sea salt
  • to taste sliced avocado
  • to taste quick pickled red onions
  • to taste serrano chiles
  • to taste thinly sliced scallions
  • to taste crumbled feta or cotija cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Prick the sweet potatoes with a fork and sprinkle with sea salt.
  2. Bake the sweet potatoes until tender, about 1 hour for large ones. Allow to cool, then scoop out the flesh and mash with milk and salt.
  3. Warm the tortillas and slather each with smashed sweet potato, then top with black beans, avocado, pickled onions, chiles, scallions, and cheese if using.
