Ingredients

The filling

  • cups black beans, drained and rinsed
  • 2 cups chopped sweet potatoes
  • 1 cup sliced green onions
  • 2 tablespoons taco seasoning
  • ½-1 teaspoon sea salt
  • 2 tablespoons lime juice
  • 8 pieces tortillas

Cilantro lime sauce

  • 1 cup raw cashews
  • 1 cup water
  • 2 tablespoons lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • ¾ teaspoon sea salt
  • 1 cup fresh cilantro

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Combine black beans, sweet potatoes, green onions, oil or broth, and spices on a parchment-lined baking sheet and mix well.
  3. Spread the mixture evenly on the baking sheet.
  4. Bake for 25-30 minutes until the sweet potatoes are crisp and cooked through.
  5. Drizzle lime juice over the baked mixture.
  6. Blend all sauce ingredients except cilantro until smooth, then pulse in cilantro.
  7. Assemble tacos by placing filling in tortillas, adding toppings, and drizzling with sauce.
