Instructions
- Preheat the oven to 400°F (205°C).
- Combine black beans, sweet potatoes, green onions, oil or broth, and spices on a parchment-lined baking sheet and mix well.
- Spread the mixture evenly on the baking sheet.
- Bake for 25-30 minutes until the sweet potatoes are crisp and cooked through.
- Drizzle lime juice over the baked mixture.
- Blend all sauce ingredients except cilantro until smooth, then pulse in cilantro.
- Assemble tacos by placing filling in tortillas, adding toppings, and drizzling with sauce.
