Ingredients

The fish

  • 4 fillets monkfish

The seasonings

  • 1 sprig thyme

Instructions

  1. Pat the monkfish fillets dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and add the fish, cooking for 3 minutes.
  3. Flip the fish, add butter, garlic, thyme, and lemon slices, and cook for another 3 minutes while basting.
  4. Remove from heat and let the fish rest for 3 minutes before serving with the pan sauce.
