Pan Fried Cod

Ingredients

The fish

  • 4 6-oz Cod fillets

The seasoning

  • 1 tsp Sea salt
  • ¾ tsp Black pepper

The cooking fats

  • 2 tbsp Olive oil
  • ¼ cup Unsalted butter

The sauce

  • ¼ cup Dry white wine
  • 3 cups Cherry tomatoes
  • 2 cloves Garlic
  • 2 tbsp Fresh basil

Instructions

  1. Pat the cod fillets dry and season with sea salt and black pepper.
  2. Heat olive oil in a large nonstick skillet over medium-high heat until shimmering.
  3. Add the cod fillets, cooking undisturbed for 3-4 minutes until golden brown.
  4. Flip the cod, reduce the heat to medium, and continue cooking for 2-4 minutes until cooked through.
  5. Transfer the cod to a plate and tent with foil to keep warm.
  6. In the same skillet, combine butter, wine, tomatoes, and garlic, scraping up browned bits from the skillet.
  7. Cook the sauce for 3-4 minutes until reduced by half and tomatoes soften.
  8. Season the sauce with remaining salt and pepper, then remove from heat.
  9. Add the cod back to the skillet, spoon the sauce over, garnish with basil, and serve.
