Instructions
- Pat the cod fillets dry and season with sea salt and black pepper.
- Heat olive oil in a large nonstick skillet over medium-high heat until shimmering.
- Add the cod fillets, cooking undisturbed for 3-4 minutes until golden brown.
- Flip the cod, reduce the heat to medium, and continue cooking for 2-4 minutes until cooked through.
- Transfer the cod to a plate and tent with foil to keep warm.
- In the same skillet, combine butter, wine, tomatoes, and garlic, scraping up browned bits from the skillet.
- Cook the sauce for 3-4 minutes until reduced by half and tomatoes soften.
- Season the sauce with remaining salt and pepper, then remove from heat.
- Add the cod back to the skillet, spoon the sauce over, garnish with basil, and serve.
