Garlic Butter Cod

The Garlic Butter Sauce

The Cod
-

6-ounce
cod fillets, approximately 1-inch thick

neutral oil (avocado, olive, vegetable, etc.)

white wine

lemon wedges (optional, for serving)
Instructions
- Sprinkle salt on both sides of the cod fillets and set aside.
- Mix all ingredients for the garlic butter in a small bowl and set aside.
- Heat a large skillet over medium-high heat for about 2 minutes.
- Pat the cod fillets dry with paper towels.
- Add neutral oil to the skillet and heat until wisps of smoke appear.
- Place the cod fillets in the skillet, skin-side down, and lower the heat to medium.
- Cook the fillets undisturbed for about 4 minutes until the bottoms caramelize.
- Carefully lift the fillets from the skillet and transfer them to a plate.
- Pour white wine into the skillet, scraping up any browned bits, and bring it to a boil.
- Reduce the heat and simmer until the liquid is reduced by half.
- Add the garlic butter to the reduced wine and stir until melted.
- Return the cod fillets to the skillet, spooning the sauce over them until they are opaque.
- Transfer the fish to serving plates, squeezing lemon over them if desired, and serve immediately.
