Ingredients

The Garlic Butter Sauce

  • ½ cup butter, softened
  • ½ tablespoon minced garlic
  • ½ teaspoon garlic powder
  • 1 pinch salt
  • 1 tablespoon chopped fresh parsley (optional)

The Cod

  • 4 6-ounce cod fillets, approximately 1-inch thick
  • to taste salt
  • 1 tablespoon neutral oil (avocado, olive, vegetable, etc.)
  • ½ cup white wine
  • to taste lemon wedges (optional, for serving)

Instructions

  1. Sprinkle salt on both sides of the cod fillets and set aside.
  2. Mix all ingredients for the garlic butter in a small bowl and set aside.
  3. Heat a large skillet over medium-high heat for about 2 minutes.
  4. Pat the cod fillets dry with paper towels.
  5. Add neutral oil to the skillet and heat until wisps of smoke appear.
  6. Place the cod fillets in the skillet, skin-side down, and lower the heat to medium.
  7. Cook the fillets undisturbed for about 4 minutes until the bottoms caramelize.
  8. Carefully lift the fillets from the skillet and transfer them to a plate.
  9. Pour white wine into the skillet, scraping up any browned bits, and bring it to a boil.
  10. Reduce the heat and simmer until the liquid is reduced by half.
  11. Add the garlic butter to the reduced wine and stir until melted.
  12. Return the cod fillets to the skillet, spooning the sauce over them until they are opaque.
  13. Transfer the fish to serving plates, squeezing lemon over them if desired, and serve immediately.
