Ingredients

The fish

  • 1½-2 pounds cod fillets
  • to taste salt
  • to taste pepper

The sauce

  • 3-4 tablespoons unsalted butter or olive oil
  • 2 teaspoons minced garlic
  • ½ tablespoon paprika
  • 1 teaspoon onion powder
  • ½-1 teaspoon cayenne pepper (optional)
  • 2-3 tablespoons basil or parsley
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400ºF and prepare a baking pan.
  2. Dry the cod fillets with paper towels and season with salt and pepper.
  3. In a small pan, heat butter and sauté garlic, paprika, onion powder, cayenne pepper, and parsley or basil for about a minute.
  4. Let the mixture sit for 5 minutes, then add lemon juice.
  5. Brush the spice mixture over the cod fillets thoroughly.
  6. Place the cod in the prepared baking dish and bake for 10-15 minutes until cooked through.
  7. Garnish with lemon before serving.
