Easy Baked Cod with Butter & Garlic

Ingredients

The fish

  • 1 lb. cod (4 4 oz. filets)

The garlic butter mixture

  • 4 Tbsp butter (room temperature)
  • 2 Tbsp olive oil
  • 4 cloves garlic (minced)
  • ¼ tsp paprika
  • ¼ tsp salt
  • 2 Tbsp fresh parsley (finely chopped)

For serving

  • 1 fresh lemon

Instructions

  1. Preheat the oven to 400ºF.
  2. In a small bowl, mix the butter, olive oil, garlic, paprika, salt, and parsley until smooth.
  3. Place the cod fillets in a baking dish and spread the garlic butter mixture over them.
  4. Slice half of the lemon and place the slices on top of the fish; cut the remaining half into wedges for serving.
  5. Bake the cod for 15-20 minutes until it flakes easily and reaches an internal temperature of 145ºF.
  6. Serve immediately with the baked lemon slices and wedges.
