Ingredients

The chocolate cake

  • 7 oz ChocZero Sugar-Free Dark Chocolate Chips
  • ¾ cup Unsalted butter
  • cups Besti Monk Fruit Allulose Blend
  • 6 large Eggs
  • ½ tsp Vanilla extract
  • 3 cups Wholesome Yum Blanched Almond Flour
  • 1 tbsp Baking powder
  • ¼ tsp Sea salt

The coconut pecan filling

  • 1 recipe Sugar-Free Sweetened Condensed Milk
  • ¾ cup Unsalted butter
  • ¼ cup Besti Brown Monk Fruit Allulose Blend
  • 6 large Egg yolks
  • ½ tbsp Vanilla extract
  • 2 cups Unsweetened shredded coconut
  • cups Pecans

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare three 9-inch cake pans.
  2. Melt the chocolate chips using a double boiler or microwave and set aside.
  3. In a large bowl, cream the butter and Besti until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in the melted chocolate and vanilla extract until smooth.
  6. Combine the almond flour, baking powder, and sea salt, mixing until smooth.
  7. Divide the batter among the prepared pans and bake for 15-20 minutes.
  8. Cool the cake layers completely before removing from pans.
  9. Prepare the coconut pecan filling by making the sugar-free sweetened condensed milk.
  10. Add butter and Besti Brown to the condensed milk and cook until smooth.
  11. Whisk in the egg yolks and cook until thickened, then stir in vanilla.
  12. Cool the filling and mix in shredded coconut and pecans.
  13. Assemble the cake by layering with the coconut pecan filling between the layers.
