Instructions
- Preheat the oven to 350°F (176°C) and prepare three 9-inch cake pans.
- Melt the chocolate chips using a double boiler or microwave and set aside.
- In a large bowl, cream the butter and Besti until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in the melted chocolate and vanilla extract until smooth.
- Combine the almond flour, baking powder, and sea salt, mixing until smooth.
- Divide the batter among the prepared pans and bake for 15-20 minutes.
- Cool the cake layers completely before removing from pans.
- Prepare the coconut pecan filling by making the sugar-free sweetened condensed milk.
- Add butter and Besti Brown to the condensed milk and cook until smooth.
- Whisk in the egg yolks and cook until thickened, then stir in vanilla.
- Cool the filling and mix in shredded coconut and pecans.
- Assemble the cake by layering with the coconut pecan filling between the layers.
