Instructions
- Preheat the oven to 350°F (177°C) and line the bottom of a 9-inch round springform pan with parchment paper.
- In a large bowl, beat together the Besti Monk Fruit Allulose Blend and softened butter until fluffy.
- Add the eggs one at a time, then mix in the almond milk and vanilla extract.
- Incorporate the almond flour, coconut flour, baking powder, and sea salt into the wet mixture.
- Transfer one-third of the batter to the prepared pan and smooth the top. Bake for 18-22 minutes until lightly golden and springy. Repeat with the remaining batter to create three layers.
- While the cake layers cool, prepare the frosting by beating together the cream cheese, butter, powdered Besti, and vanilla extract until smooth.
- Once the cake layers are cool, stack them with frosting in between each layer and frost the top and sides of the cake. Optionally, top with chopped pecans.
