Ingredients

Keto Cake

  • 1 cup Besti Monk Fruit Allulose Blend
  • ¾ cup Unsalted butter (softened)
  • 8 large Egg
  • ½ cup Unsweetened almond milk
  • 1 tbsp Vanilla extract
  • 3 cups Wholesome Yum Blanched Almond Flour
  • ½ cup Wholesome Yum Coconut Flour
  • tbsp Baking powder
  • ¼ tsp Sea salt

Cream Cheese Frosting

  • 32 oz Cream cheese (softened)
  • cup Unsalted butter (softened)
  • cup Besti Powdered Monk Fruit Allulose Blend
  • 1 tsp Vanilla extract

Instructions

  1. Preheat the oven to 350°F (177°C) and line the bottom of a 9-inch round springform pan with parchment paper.
  2. In a large bowl, beat together the Besti Monk Fruit Allulose Blend and softened butter until fluffy.
  3. Add the eggs one at a time, then mix in the almond milk and vanilla extract.
  4. Incorporate the almond flour, coconut flour, baking powder, and sea salt into the wet mixture.
  5. Transfer one-third of the batter to the prepared pan and smooth the top. Bake for 18-22 minutes until lightly golden and springy. Repeat with the remaining batter to create three layers.
  6. While the cake layers cool, prepare the frosting by beating together the cream cheese, butter, powdered Besti, and vanilla extract until smooth.
  7. Once the cake layers are cool, stack them with frosting in between each layer and frost the top and sides of the cake. Optionally, top with chopped pecans.
