Instructions
- Preheat the oven to 350°F (177°C) and line a loaf pan with parchment paper.
- In a large bowl, beat the butter and sweetener together until fluffy.
- Add the eggs one at a time, beating for 30 seconds after each addition, then add the vanilla.
- Lower the mixer speed and beat in the almond flour, baking powder, and sea salt. If using, sprinkle in the xanthan gum and mix until just combined.
- Scrape the bowl and transfer the batter to the prepared loaf pan, smoothing the top.
- Bake for 25-30 minutes until golden, then tent with foil and bake for an additional 20-30 minutes until a toothpick comes out clean.
- Allow the cake to cool in the pan before slicing.
