Ingredients

  • 1 cup Unsalted butter (softened; 2 sticks)
  • cup Besti Monk Fruit Allulose Blend
  • 4 large Eggs (at room temperature)
  • ½ tbsp Vanilla extract
  • 2 ½ cups Wholesome Yum Blanched Almond Flour
  • ½ tbsp Baking powder
  • ¼ tsp Sea salt
  • ½ tsp Xanthan gum (optional, but recommended for structure)

Instructions

  1. Preheat the oven to 350°F (177°C) and line a loaf pan with parchment paper.
  2. In a large bowl, beat the butter and sweetener together until fluffy.
  3. Add the eggs one at a time, beating for 30 seconds after each addition, then add the vanilla.
  4. Lower the mixer speed and beat in the almond flour, baking powder, and sea salt. If using, sprinkle in the xanthan gum and mix until just combined.
  5. Scrape the bowl and transfer the batter to the prepared loaf pan, smoothing the top.
  6. Bake for 25-30 minutes until golden, then tent with foil and bake for an additional 20-30 minutes until a toothpick comes out clean.
  7. Allow the cake to cool in the pan before slicing.
