Ingredients

  • 4 eggs room temperature eggs
  • 2 cups blanched almond flour
  • ¾ cup powdered sweetener
  • ¼ cup sour cream
  • 4 oz cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • teaspoons baking powder
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9x5 loaf pan with butter or cooking oil.
  3. In a mixing bowl, combine butter, cream cheese, and powdered sweetener and mix until smooth.
  4. Add eggs, sour cream, vanilla extract, and lemon extract to the mixture and mix well.
  5. In a separate bowl, combine almond flour, baking powder, and salt, then add to the wet mixture and mix until combined.
  6. Pour the batter into the greased pan.
  7. Bake for 30-35 minutes, checking with a toothpick to ensure it comes out clean.
  8. Remove from the oven and let cool in the pan for 10 minutes before transferring to a cooling rack.
