Instructions
- Preheat the oven to 350°F (180°C) and prepare a loaf pan with parchment paper and cooking spray.
- In a large mixing bowl, whisk together eggs, Greek yogurt, softened butter, milk, and vanilla extract until well combined.
- Fold in the almond flour, coconut flour, granulated sweetener, and baking powder until the mixture is smooth.
- Pour the batter into the prepared loaf pan and bake for about 50 minutes, or until a skewer comes out mostly clean.
- Allow the cake to cool briefly in the pan, then transfer to a wire rack to cool completely before frosting.
- Refrigerate for 30 minutes to let the frosting firm up before slicing.
