Ingredients

The cake

  • 3 large eggs
  • ½ cup butter, softened
  • ½ cup Greek yogurt
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • cups almond flour
  • ¼ cup coconut flour
  • cup granulated sweetener
  • 1 teaspoon baking powder

The frosting

  • ½ cup keto vanilla frosting

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare a loaf pan with parchment paper and cooking spray.
  2. In a large mixing bowl, whisk together eggs, Greek yogurt, softened butter, milk, and vanilla extract until well combined.
  3. Fold in the almond flour, coconut flour, granulated sweetener, and baking powder until the mixture is smooth.
  4. Pour the batter into the prepared loaf pan and bake for about 50 minutes, or until a skewer comes out mostly clean.
  5. Allow the cake to cool briefly in the pan, then transfer to a wire rack to cool completely before frosting.
  6. Refrigerate for 30 minutes to let the frosting firm up before slicing.
