Ingredients

The cake

  • cup granulated sweetener

  • ½ cup Greek yogurt
  • 3 large eggs
  • ¼ cup milk
  • 1 teaspoon lemon extract

The lemon glaze

  • ½ cup sugar free powdered sugar
  • 2 tablespoons lemon juice
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350F (180C) and prepare a loaf pan.
  2. In a mixing bowl, combine the dry ingredients.
  3. In another bowl, whisk the wet ingredients together.
  4. Fold the dry ingredients into the wet mixture until fully combined.
  5. Transfer the batter to the loaf pan and bake for 50 minutes.
  6. Prepare the glaze by mixing the powdered sweetener, lemon juice, and vanilla extract.
  7. Cool the cake, then pour the glaze over it and allow it to set.
