Instructions
- Preheat the oven to 450º F (232º C).
- Remove giblets from the chicken and season the cavity with salt.
- Truss the chicken using kitchen twine to ensure even cooking.
- Pour oil over the chicken and sprinkle liberally with salt.
- Roast the chicken in the oven for 50 minutes or until the internal temperature reaches 161º F.
- Remove the chicken from the oven and let it rest for 5 minutes before carving.
- Prepare the gravy by placing the skillet on the stovetop, pouring out excess drippings, and adding flour.
- Whisk the mixture until smooth, then gradually add chicken stock while whisking continuously.
- Season the gravy with salt and thyme or sage, then simmer until slightly thickened.
- Carve the chicken and serve with gravy.
