Ingredients

The Chicken

  • 1 whole 3-3.5 pound chicken
  • 2 tablespoons avocado oil or other oil with a high smoke point
  • 1 teaspoon salt

The Gravy

  • 3 tablespoons drippings or fat of choice (like butter or oil)
  • 3 tablespoons flour or cassava flour
  • 2 ½ cups chicken stock
  • ½ teaspoon salt
  • 1 pinch dried thyme or sage (if desired)
  • 4 tablespoons arrowroot powder or cassava flour (or all-purpose flour)

Instructions

  1. Preheat the oven to 450º F (232º C).
  2. Remove giblets from the chicken and season the cavity with salt.
  3. Truss the chicken using kitchen twine to ensure even cooking.
  4. Pour oil over the chicken and sprinkle liberally with salt.
  5. Roast the chicken in the oven for 50 minutes or until the internal temperature reaches 161º F.
  6. Remove the chicken from the oven and let it rest for 5 minutes before carving.
  7. Prepare the gravy by placing the skillet on the stovetop, pouring out excess drippings, and adding flour.
  8. Whisk the mixture until smooth, then gradually add chicken stock while whisking continuously.
  9. Season the gravy with salt and thyme or sage, then simmer until slightly thickened.
  10. Carve the chicken and serve with gravy.
