Instructions
- Preheat the oven to 375°F.
- In a medium oven-safe skillet, brown the ground beef in olive oil, then add taco seasoning and salsa, and remove from skillet.
- Sauté the green pepper in the same skillet until crisp tender.
- Return the meat to the skillet, add tomatoes and scallions, then pour scrambled eggs on top and sprinkle with salt and cheese.
- Bake for 20 to 25 minutes until set and no longer jiggly.
- Let it sit for 10 minutes before cutting and serve warm.
