Mexican Frittata

Ingredients

The frittata

  • 8 eggs eggs
  • ½ lb ground beef
  • 1 tbs olive oil
  • ½ cup salsa
  • 3 scallions scallions
  • lb plum tomatoes
  • 1 small green pepper
  • ¼ tsp salt
  • ½ cup grated cheddar cheese

Seasoning

  • 2 tsp taco seasoning

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium oven-safe skillet, brown the ground beef in olive oil, then add taco seasoning and salsa, and remove from skillet.
  3. Sauté the green pepper in the same skillet until crisp tender.
  4. Return the meat to the skillet, add tomatoes and scallions, then pour scrambled eggs on top and sprinkle with salt and cheese.
  5. Bake for 20 to 25 minutes until set and no longer jiggly.
  6. Let it sit for 10 minutes before cutting and serve warm.
