Instructions
- Preheat the oven to 425°F.
- In a large bowl, combine eggs, marinara sauce, oregano, and black pepper, and whisk until smooth.
- Heat oil in a 10-12 inch oven-safe skillet over medium heat.
- Sauté diced onion and mashed garlic for about 4 minutes until softened.
- Add spinach to the skillet and stir until wilted.
- Pour the egg mixture into the skillet and cook undisturbed for 5-6 minutes until edges begin to set.
- Sprinkle mozzarella cheese and pepperoni on top of the egg mixture.
- Transfer the skillet to the oven and bake for 6 minutes until eggs are cooked through.
- Allow to cool slightly before slicing and serving.
