Roasted Tomato Caprese Frittata

Ingredients

  • 10 pieces eggs
  • ½ cup 2% milk
  • 2 tablespoons olive oil
  • 1 pint cherry tomatoes
  • 1 clove garlic, minced
  • 3 cups fresh spinach, diced
  • 4 oz. fresh mozzarella balls
  • to taste salt & pepper
  • to garnish chiffoned fresh basil

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the eggs and milk in a large bowl, then season with salt and pepper.
  3. Heat a medium oven-safe skillet over medium heat and add olive oil and cherry tomatoes, cooking until slightly charred.
  4. Add minced garlic and spinach to the skillet and sauté until the spinach is wilted.
  5. Pour the egg mixture into the skillet, stirring to combine, and top with mozzarella balls.
  6. Let the mixture sit on the burner for 4 minutes.
  7. Transfer the skillet to the oven and bake for 10-12 minutes until the frittata is set.
  8. Garnish with fresh basil before serving.
