Cheesy Bacon Spinach Frittata

Instructions
- Preheat the oven to 350°F.
- In a large bowl, whisk together the eggs and milk, and season with salt and pepper.
- Heat an oven-safe skillet over medium heat and cook the bacon until slightly crispy.
- Remove some bacon grease, leaving about a tablespoon in the pan, then add the spinach and stir until wilted.
- Add the roasted red peppers and the egg mixture to the skillet, stirring to combine, and top with tomatoes and goat cheese.
- Let the mixture sit on the burner for about 4 minutes.
- Transfer the skillet to the oven and bake for 10-12 minutes until the frittata is set.
- Garnish with chives and serve.
