Cheesy Bacon Spinach Frittata

Ingredients

  • 4 strips bacon, diced
  • 3 cups fresh spinach, diced
  • ½ cup julienned roasted red pepper
  • 4 oz goat cheese
  • cup halved cherry tomatoes
  • 10 units eggs
  • ½ cup 2% milk
  • to taste salt & pepper
  • to garnish fresh diced chives

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the eggs and milk, and season with salt and pepper.
  3. Heat an oven-safe skillet over medium heat and cook the bacon until slightly crispy.
  4. Remove some bacon grease, leaving about a tablespoon in the pan, then add the spinach and stir until wilted.
  5. Add the roasted red peppers and the egg mixture to the skillet, stirring to combine, and top with tomatoes and goat cheese.
  6. Let the mixture sit on the burner for about 4 minutes.
  7. Transfer the skillet to the oven and bake for 10-12 minutes until the frittata is set.
  8. Garnish with chives and serve.
