Bacon Spinach Tomato Swiss Frittata

Ingredients

  • 8 oz bacon, chopped
  • 3 oz fresh spinach, roughly chopped
  • 8 large eggs
  • ¼ cup half and half
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • to taste salt
  • to taste black pepper
  • 1 cup grape tomatoes, halved
  • cup shredded Swiss cheese

Instructions

  1. Preheat the oven to 350°F and butter a 9-10 inch deep pie dish.
  2. Cook the bacon in a skillet over medium-high heat until browned and crisp, then drain on paper towels.
  3. Sauté the spinach in the same skillet briefly until wilted, then remove and set aside with the bacon.
  4. In a mixing bowl, whisk together the eggs, half and half, onion powder, garlic powder, and season with salt and pepper.
  5. Add the cooked bacon, spinach, tomatoes, and Swiss cheese to the egg mixture and stir to combine.
  6. Pour the mixture into the prepared pie dish.
  7. Bake in the preheated oven until just set, about 30-35 minutes.
  8. Cut into wedges and serve warm.
