Turkey Bacon & Spinach Frittata

Instructions
- Preheat the oven to 350ºF.
- Heat a medium-sized oven-safe skillet over medium-high heat.
- Slice the turkey bacon into thin strips.
- Add coconut oil and turkey bacon to the skillet and sauté until crispy.
- Add fresh spinach to the skillet and sauté until cooked down.
- In a separate bowl, whisk together the eggs and milk.
- Pour the egg mixture into the skillet and stir to combine, letting it sit for 4 minutes.
- Top with crumbled goat cheese and chopped chives.
- Transfer the skillet to the oven and bake for 10-12 minutes until the frittata is set.
- Slide the frittata out of the skillet onto a cutting board and serve.
