Turkey Bacon & Spinach Frittata

Ingredients

  • 8 strips turkey bacon
  • 1 T. coconut oil
  • 1 ½ cups fresh spinach
  • ¼ cup chives
  • 3 oz. goat cheese
  • 8 units eggs
  • ½ cup 2% milk

Instructions

  1. Preheat the oven to 350ºF.
  2. Heat a medium-sized oven-safe skillet over medium-high heat.
  3. Slice the turkey bacon into thin strips.
  4. Add coconut oil and turkey bacon to the skillet and sauté until crispy.
  5. Add fresh spinach to the skillet and sauté until cooked down.
  6. In a separate bowl, whisk together the eggs and milk.
  7. Pour the egg mixture into the skillet and stir to combine, letting it sit for 4 minutes.
  8. Top with crumbled goat cheese and chopped chives.
  9. Transfer the skillet to the oven and bake for 10-12 minutes until the frittata is set.
  10. Slide the frittata out of the skillet onto a cutting board and serve.
