Instructions
- 1. Preheat the oven to 350°F (176°C).
- 2. Rinse the cherry tomatoes, drain, and pat dry.
- 3. In a bowl, crack the eggs and add salt, black pepper, Parmesan cheese, and chopped basil or parsley.
- 4. Heat an oven-safe skillet over medium heat and add ½ tablespoon of olive oil.
- 5. Add the cherry tomatoes to the skillet and toss gently for 1 minute.
- 6. Pour the egg mixture into the skillet and cook until the edges are set but the center is still runny.
- 7. Transfer the skillet to the oven and bake for 5 minutes.
- 8. Remove from heat, let cool slightly, cut into wedges, and serve immediately.
