Ingredients

  • 12 oz cherry tomatoes
  • 4 large eggs
  • ¼ teaspoon salt
  • 3 dashes ground black pepper
  • 3 tablespoons Parmesan cheese
  • tablespoons olive oil
  • 1 tablespoon Italian basil or parsley, chopped

Instructions

  1. 1. Preheat the oven to 350°F (176°C).
  2. 2. Rinse the cherry tomatoes, drain, and pat dry.
  3. 3. In a bowl, crack the eggs and add salt, black pepper, Parmesan cheese, and chopped basil or parsley.
  4. 4. Heat an oven-safe skillet over medium heat and add ½ tablespoon of olive oil.
  5. 5. Add the cherry tomatoes to the skillet and toss gently for 1 minute.
  6. 6. Pour the egg mixture into the skillet and cook until the edges are set but the center is still runny.
  7. 7. Transfer the skillet to the oven and bake for 5 minutes.
  8. 8. Remove from heat, let cool slightly, cut into wedges, and serve immediately.
