Tacos Al Pastor

pork butt, fat cap removed and sliced into ¼ to ½ inch pieces

onions (one for the marinade, one for the rotisserie)

Instructions
- Combine all ingredients except the pork butt, reserved onion, and half pineapple in a food processor and blend until smooth.
- Slice the pork into thin pieces and marinate for no more than 30 minutes to avoid mushiness from the pineapple.
- Skewer the marinated meat, half of the onion, and pineapple on the rotisserie, starting with the onion.
- Set the grill to 365°F and cook until the pork reaches an internal temperature of 145°F, checking with a thermometer.
