Tacos Al Pastor

Ingredients

  • 4 lb pork butt, fat cap removed and sliced into ¼ to ½ inch pieces
  • 2 whole onions (one for the marinade, one for the rotisserie)
  • ½ whole pineapple (about 2 cups for the marinade)
  • 2 medium oranges (juice and zest from both)
  • 4 cloves garlic
  • 3 whole chipotle peppers in adobo sauce
  • cup apple cider vinegar
  • 3 tbsp brown sugar or coconut palm sugar
  • tbsp crushed red chili flakes
  • 3 tsp ground cumin
  • 3 tsp dried oregano
  • ½ tbsp himalayan or sea salt
  • 2 tsp fresh ground black pepper

Instructions

  1. Combine all ingredients except the pork butt, reserved onion, and half pineapple in a food processor and blend until smooth.
  2. Slice the pork into thin pieces and marinate for no more than 30 minutes to avoid mushiness from the pineapple.
  3. Skewer the marinated meat, half of the onion, and pineapple on the rotisserie, starting with the onion.
  4. Set the grill to 365°F and cook until the pork reaches an internal temperature of 145°F, checking with a thermometer.
