Ingredients

The pork

  • 4 pounds pork roast such as pork butt
  • 2 teaspoons vegetable oil
  • 1 ½ teaspoons salt
  • ¾ teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 onion peeled and quartered
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh lime juice
  • 1 cup chicken broth
  • cup orange juice
  • 1 tablespoon chili powder

The tacos

  • 16 pieces flour tortillas
  • 1 ½ cups pico de gallo
  • ½ cup cotija cheese, finely grated

Instructions

  1. Heat oil in a large pot and brown the pork roast on all sides after seasoning with salt and pepper.
  2. Transfer the roast to a slow cooker and add cumin, onion, bay leaves, oregano, lime juice, chicken broth, orange juice, and chili powder.
  3. Cover and cook on HIGH for 4 hours or LOW for 8 hours.
  4. Remove onion and bay leaves, then shred the pork with two forks.
  5. Warm the tortillas, fill them with shredded pork, and top with pico de gallo and cotija cheese before serving.
