Instructions
- Heat oil in a large pot and brown the pork roast on all sides after seasoning with salt and pepper.
- Transfer the roast to a slow cooker and add cumin, onion, bay leaves, oregano, lime juice, chicken broth, orange juice, and chili powder.
- Cover and cook on HIGH for 4 hours or LOW for 8 hours.
- Remove onion and bay leaves, then shred the pork with two forks.
- Warm the tortillas, fill them with shredded pork, and top with pico de gallo and cotija cheese before serving.
